While it has since been discovered that I do not have coeliacs disease, it has been determined that I am Gluten Intolerant (intolerant to white flour/wheat/barley/rye) and so I am on a gluten free diet to help my body feel normal again. From allergy testing it has also been determined that my body finds it hard to tolerate soy. At times I feel it is hard for my body to tolerate dairy as well, I think mainly when my body is already run down.
With so many food options down the drain, I am on a quest to find yummy gluten free foods as well as a milk substitute. Here I go ...
